The Simcoe we selected in 2021 has cool melon and lemon character with hints of Gatorade Riptide Rush. Combine that with Mosaics melon and guava character and you get a deep and complex hop character. Mo Simcoe is tropical, dry and resinous but also has a hop sweetness that rounds it all out.
