2023 Caroline Morey Les Champs Gains Rouge, Chassagne-Montrachet Premier Cru, France Bichery Winemaking in “lagar” with footThis rare red from Les Champs Gainsa premier cru better known for its Chardonnayis produced from old vine Pinot Noir planted on shallow, stony limestone and light clay soils at mid slope. Caroline Morey farms organically and harvests by hand, with careful triage in the vineyard. The fruit is fully destemmed and fermented with native yeasts in traditional wooden vats using gentle extraction. Wine arrives the last week of December, 2025.
