The most important difference is the secondary fermentation is only done with natural grape juice with active yeast. A radical turn for sure. This is a delicious blend of 65% Pinot Noir, 20% Chardonnay and 15% Pinot Meunier from the clay and chalk soils of the Vallee de la Marne.
